Ingredients
- 130g unsalted butter

150g golden syrup

1 teaspoon bicarbonate of soda

1 tablespoon boiling water

120g plain flour
-
75g light brown sugar

125g desiccated coconut
-
155g rolled oats
-
1/2 teaspoon cinnamon (optional)
Directions
Preheat oven to 150 degrees Celsius and line 2-3 baking sheets with baking paper.
Over medium heat, melt together your butter and golden syrup.
In a small bowl, mix together your bicarb and boiling water.
Once your butter mixture begins to boil, remove from the stove and immediately pour in your bicarb/ water- mixing well and set aside.
Mix together your flour, sugar, coconut, oats and optional cinnamon- and pour in your butter mixture. Once combined, spoon your dough onto your baking sheets and flatten slightly, toping each with some shredded coconut.
Bake in the oven for 15-20 minutes or until golden brown. ENJOY!
