Most households have dumplings and frozen veg sitting in the freezer, so let’s put them to good use. You’ve probably seen this recipe all over Instagram and TikTok- and yes, it’s as good as it looks. It’s a super easy, hearty one-pot meal, perfect for nights when you can’t be bothered but still want something delicious.
Ingredients
3 cloves minced garlic
4 tablespoons soy sauce
2 teaspoons grated ginger
2 tablespoons red curry paste
2 teaspoons sesame oil
2 tablespoons Rice vinegar
1.5 cups chicken or vegetable stock (or water)
½ cup coconut milk
Approx 32 dumplings
3-4 bunches bok choy (or another leafy green), chopped
¾ cup edamame beans
To serve
Chopped Spring onios
Chilli oil
Sesame seeds
Fresh coriander
Directions
In an oven-safe baking dish, mix together your garlic, ginger, soy sauce, curry paste, sesame oil, rice vinegar, stock and coconut milk. Then, place in your bok choy, edamame beans and dumplings.
Bake in a 185 degrees Celsius oven for 15-20 minutes.
Top with spring onions, chilli oil, sesame seeds and coriander. ENJOY!
