Soft, chewy and packed with chocolate chips, these cookies are always a winner. I love keeping balls of the dough in the freezer so they're ready to bake whenever a cookie craving strikes.
Ingredients

225g butter, softened
- 3/4 cup caster sugar
- 3/4 cup brown sugar

2 teaspoons vanilla
- 2 eggs

2 ¼ cups self raising flour
- Pinch salt

2.5 cups chocolate chips
Directions
Preheat oven to 180 degrees Celsius and line your baking trays.
Using an electric mixer, beat your butter and sugars together until creamy. Then add in your eggs and vanilla, beating again until light and fluffy.
- Now, add in your flour and salt, mix until just combined before adding in your choc chips.
Spoon your cookie mixture onto your trays, (or roll into balls) leaving space in between as they spread, and cook for 12-15 minutes. Leave to cool and enjoy!
Recipe Note
Cookie dough freezes beautifully for up to 3 months.
I like to roll the dough into balls first, place them on a tray and freeze until firm. Then transfer them to a freezer-safe container or ziplock bag. That way you can bake as many or as few as you like whenever the craving hits.
Bake straight from frozen, just adding 1–2 extra minutes to the baking time.
