A comforting classic that’s perfect for Christmas. Tender roasted cauliflower is smothered in a rich, creamy garlic and Dijon cheese sauce, then baked until golden and bubbly. Finished with fresh shives, it’s an ideal festive side dish that pairs beautifully with any Christmas spread.
Ingredients
- 1 head cauliflower, torn/ cut into florets
- 1 tablespoon extra virgin olive oil
- ½ teaspoon salt
- ¼ teaspoon pepper
- 75g butter
- 1 garlic clove, minced
- 1 teaspoon Dijon mustard
- 50g flour
- 500ml milk
- 1 stock cube
- ½ teaspoon salt
- ¼ teaspoon pepper

1-2 tablespoons fresh chives, chopped

Roast Cauliflower
Preheat oven to 180 degrees Celsius and place your cauliflower on a lined baking sheet. Coat in your extra virgin olive oil, salt and pepper, and roast for 25-30 minutes or until tender and golden.
Cheesy Sauce
To make your cheese sauce, melt your butter in a saucepan over medium heat, then saute your garlic for 1-2 minutes until fragrant. Add in your flour, stirring constantly for 1 minute, then slowly pour in your milk.
- Add in your stock cube, Dijon, salt, pepper and cheeses, and stir until your sauce thickens.
Top your cauliflower with your cheesy sauce, a little extra cheese and bake in the oven for 20-25 minutes, or until browned and bubbly.
To serve, top with chopped chives.
