A fun take on chicken gyros, cooked straight onto the tortilla for a quick and easy dinner. Finished with fresh salad, feta and yoghurt, these tacos are light, flavour-packed and perfect for nights when you want something different without overthinking it.

250g chicken mince

½ teaspoon garlic powder

½ teaspoon onion powder

1/2 teaspoon dried oregano

¼ teaspoon paprika

½ teaspoon salt

¼ teaspoon pepper

½ red onion, diced

1 cucumber, diced

1 cup cherry tomatoes, halved

¼ cup kalamata olives, chopped

½ lemon, juiced

½ cup crumbled feta

Salt/pepper

X4 mini tacos

2 tablespoons Greek Yoghurt or Tzatziki

Chopped fresh parsley

In a bowl, mix the chicken mince, garlic powder, onion powder, paprika, salt, pepper, and oregano until well combined.
Place 1–2 tablespoons of chicken mixture on each mini tortilla and press into a flat, even layer. Make sure the chicken is only a thin layer so when you flip it over the other side cooks through the tortilla.
For your Greek salad, mix together diced cucumber, cherry tomatoes, red onion, chopped olives, feta , lemon juice, salt and pepper.
Heat a small amount of olive oil in a saucepan over medium-high heat. Place the tortilla chicken-side down and cook for 3–4 minutes. Flip and cook for 1 more minute on the other side.
To serve, top each taco with a spoonful of Tzatziki, Greek salad and a sprinkle of fresh parsley.
