1 tablespoon soy sauce

½ tablespoon sriracha

½ tablespoon honey

½ cup rice vermicelli noodles, cooked

¼ cup capsicum, sliced

¼ cup cucumber, sliced

¼ cup carrot, sliced

¼ cup red cabbage, finely sliced

¼ cup mint leaves, chopped

¼ cup coriander leaves, chopped

¼ cup spring onion, sliced

1 tablespoon peanuts, chopped

1 tablespoon soy sauce

1 teaspoons honey

1 teaspoon sriracha

½ teaspoon sesame oil

½ lime, juiced

Directions
Preheat your oven to 200 degrees Celcius and marinate your chicken in soy sauce, sriracha and honey. Place in the fridge for 10 minutes.
To cook your chicken, place in the oven for 15 minutes.
For your dressing, mix your soy sauce, honey, sriracha, sesame oil, lime juice and garlic together until combined.
For your salad, simply mix your noodles, capsicum, cucumber, cabbage, carrot, mint and coriander together. Then, toss your dressing into your salad.
To serve, place your salad into a bowl and top with your sliced chicken, spring onions and peanuts. Enjoy!
