Chocolate Fudgy Brownies

Rich, chocolatey and perfectly fudgy, these brownies have a soft, gooey centre, crackly top and plenty of chunks of creamy milk chocolate throughout. They’re super simple to make and the perfect sweet treat when you’re craving something chocolatey.

Ingredients
225g unsalted butter
1 ½ cups caster sugar
¾ cup cocoa powder
3 large eggs
1 teaspoon vanilla extract
½ teaspoon salt
1 cup plain flour
1 ½ cups milk chocolate, roughly chopped
Vanilla Ice cream to serve
Directions
Preheat the oven to 175 degrees Celsius. Grease and line a 20 cm square baking tin with baking paper.
Melt the butter in a large microwave-safe bowl.
Add the caster sugar and cocoa powder to the and whisk together for around 30 seconds.
Add the eggs, vanilla and salt and whisk until combined.
Add the flour and chopped chocolate and gently fold together until just combined. Be gentle! Don’t overmix!
Pour the mixture into the prepared baking tin and spread evenly.
Bake for 35–40 minutes, or until the edges are set and the centre is still slightly fudgy. A skewer inserted into the centre should come out with a few moist crumbs.
Allow to cool in the tin before slicing and serving with vanilla ice cream.
