Chocolate Mousse

Sweets
Rich, silky and seriously chocolatey, this classic chocolate mousse is the kind of dessert everyone comes back for

Ingredients
- 450 ml thickened cream
- 6 large eggs, separated
- ½ teaspoon cream of tartar
- 80g caster sugar
- 300g milk chocolate
- 300g dark chocolate
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
- 150g milk or dark chocolate, finely chopped
To serve
- Whipped cream (optional)
- Fresh berries (optional)
Directions
Whip the cream until soft peaks form and set aside.
In a clean bowl, whisk the egg whites with the cream of tartar until foamy. Gradually add the caster sugar and continue whisking until stiff and glossy.
Melt the milk and dark chocolate together until completely smooth. Allow it to cool slightly.
Add a generous spoonful of the whipped cream to the chocolate, followed by the egg yolks, vanilla and salt. Whisk until combined.
Fold through the remaining whipped cream.
Gently fold through half the whipped egg whites, then the remaining half, taking care not to knock out all that air. Gently fold in chopped chocolate (optional, but a delicious crunch element!)
Pour into a large serving bowl, cover and refrigerate overnight to set.
Serve with whipped cream & berries!
