This Chocolate Self Saucing Pudding is one of my mum’s oldest recipes. It is over 30 years old and still tastes just as good today. I grew up making this with her, and it’s the kind of dessert that instantly feels nostalgic and comforting. Ingredients
Pudding
2 eggs
100g butter
1/4 cup caster sugar
1/4 cup brown sugar
1 cup milk
2 cups self raising flour (sifted)
4 tablespoons cocoa powder (sifted)
Topping
1/2 cup caster sugar
2 tablespoons cocoa powder
4 cups boiling water
To serve
Icing sugar
Vanilla ice cream
Directions
Preheat oven to 200 degrees Celsius and grease a baking dish (approx 30 x 20cm) with butter.
Using an electric mixer, beat together your eggs, butter, milk, sugars, flour and cocoa powder until smooth. Pour batter into your baking dish.
Mix together your sugar and cocoa powder and spread on top of your pudding. Pour over your boiling water and bake in the oven for 30 minutes.
Dust with icing sugar, and serve with ice cream. Enjoy!
