Classic Lemon Slice

A buttery biscuit base topped with a smooth, tangy lemon filling that is the perfect balance between sweet and refreshing. Chill it, slice it, and you’ve got a crowd-pleaser for any occasion...baby showers, picnics, lunchboxes, or a sweet treat after dinner.
Ingredients
- ½ cup condensed milk
- 125g butter
- 250g granita biscuits
- 1 cup shredded coconut
- 1 lemon zest
- 2 cups icing sugar, sifted
- 30g softened butter
- 3-6 tablespoons lemon juice

Directions
Grease and line a square slice tin (approx 20cm x 20cm) with baking paper.
- Over medium heat, melt your condensed milk and butter for around 5 minutes until smooth (stirring constantly).
- Using a food processor or blender, blitz your biscuits until a fine crumb and then mix in your coconut and lemon zest. Then, add in your condensed milk and butter mixture.
Press into the base of your pan and refrigerate for 1-2 hours (until firm).
To make your lemon icing, use an electric mixer and mix your sugar, butter and lemon juice together until smooth. Add more lemon juice as you need to reach a desired consistency.
Spread on top of your slice and for decoration, zest some extra lemon on top. Place back in the fridge to set for around 30 minutes, then slice and ENJOY!
Recipe Note
I sometimes like to use 125g (half packet) of Marie biscuits and 125g (half packet) of butternut snap biscuits- it is the perfect combination!
