A cosy one-pan Tuscan chicken orzo with sundried tomatoes, herbs and a creamy parmesan finish. Comforting, flavour-packed and perfect for an easy weeknight dinner.
Ingredients

½ tablespoon olive oil

1 shallot, diced

2 garlic cloves

1 chicken breast
-
½ teaspoon salt

¼ teaspoon pepper

½ teaspoon chilli flakes

1 tablespoon fresh thyme

¼ cup sundried tomatoes
-
¼ cup roasted capsicum
-
½ cup orzo
-
1.5 cups chicken stock
-
1 tablespoon lemon juice
-
1 teaspoon dijon mustard
-
1 tablespoon cream
-
1 cup spinach
-
1 tablespoon parmesan cheese
Directions
Season your chicken breast with your salt and pepper and olive oil and place in a non-stick frying pan over medium-high heat. Cook for 2 minutes each side and remove.
Now, add in your shallot, garlic cloves and chilli flakes and saute until fragrant. Add in your sundried tomatoes, capsicums and dried orzo, cooking for 2 minus, before adding in your chicken stock, lemon juice and thyme. Cook for 3 minutes.
Make sure you continue to mix your orzo, so it does not stick to the bottom of the pan.
Now, add back in your chicken breast and cover with a lid and simmer for 5-7 minutes, or until your orzo is cooked.
Remove your chicken breast and slice.
To finish off your orzo, stir in your mustard, cream, spinach and parmesan cheese.
Top with your sliced chicken and enjoy!
