A 30-year-old family recipe pulled straight from my mum’s cookbook. This custard pavlova is proof that the best desserts don’t need to be complicated- effortless to make, rich, creamy, and even better than the classic.
Ingredients
- 1.5 cups egg whites
- 1.5 cups castor sugar
- 2 tablespoons custard powder
- 2 tablespoons limoncello
- 1/3 cup boiling water
- 1 cup lemon curd (store-bought or homemade)
- 600ml thickened cream
- 2 lemons, zest
- 1 passionfruit (pulp)

Directions
Preheat your oven to 210 degrees Celsius. In an electric mixer, place your egg whites, castor sugar, custard powder, limoncello, and boiling water into the bowl, and whisk/beat on high for 10 minutes.
Either on a pavlova plate (that is a little wet) or a lined baking sheet, place your meringue in the center, and spread it out to form a large circle.
Bake in your oven for 10 minutes, and then turn your oven off leaving your pavlova inside until it has completely cooled.
Once ready to serve, using an electric mixer, whip your cream for around 2-3 minutes (until soft peaks form).
Spread your lemon curd on your pavlova and then layer on your whipped cream. Top with your lemon zest, berries and passionfruit. ENJOY!
