DIY-style dinners are honestly some of my favourites. They’re so simple as everything gets spread out on one big board and everyone helps themselves. It’s interactive, fun, and always a guaranteed crowd-pleaser.
For the chicken, I take a little “cheats” approach: I grab butterflied chicken from the butcher, marinate it, then bake it in the oven until juicy and tender. Once it’s cooked, I just chop it all up- no skewers, no fuss, same delicious result.
If you want to add lamb, my go-to is lamb fillets or backstraps. Throw them on the BBQ until they’re lightly charred and still tender inside, then slice them up. Totally optional, but so good.

4 garlic cloves, minced

3 tablespoons extra virgin olive oil

1 teaspoon salt

½ teaspoon pepper

2 teaspoons dried oregnao

2 lemons, juiced

1 teaspoon paprika

800g-1kg Lamb fillets or backstraps

2 tablespoons extra virgin olive oil

2 teaspoons dried oregano

2 garlic cloves, minced

1 lemon, juiced

½ teaspoon pepper

⅓ cup feta

1 garlic clove, minced

1 cup Greek yoghurt

1 tablespoon chopped parsley (or mint/ dill)

½ cup grated cucumber, with excess water squeezed out

800g-1kg potatoes, cut into small cubes

2 tablespoons extra virgin olive oil

1 head of Iceberg lettuce, shredded

4 tomatoes, thinly sliced

1 red onion, thinly sliced

2 Lebanese cucumbers, thinly sliced

6-10 pita breads (depending on how many each person wants!)

Directions
Roast Potatoes
Preheat oven to 200 degrees Celcius fan forced. Place your potatoes in a pot and fill with water. Bring to a boil, then reduce to a simmer and cook until your potatoes are fork-tender (around 12-15 minutes).
Drain, and give your potatoes a ‘smash’ around in the pot, then place them in your roasting pan with your extra virgin olive oil and salt.
Ensure your potatoes are evenly coated, then place in the oven for 45-50 minutes, giving them a mix half way through.
Chicken
Mix together your extra virgin olive oil, garlic, salt, pepper, oregano, lemon juice and paprika.
Pour the marinade on your chickens, and place them into a large roasting pan (I like to throw the lemons in here for added flavour too), and cook for 45-55 minutes on 200 degrees celcius. Allow to rest for a few minutes, before cutting/ shredding.
Lamb
Marinate lamb in extra virgin olive oil, garlic, salt, pepper, oregano, lemon juice and feta. Then cook on a hot barbecue or pan 3-4 minutes each side. Rest for 5 minutes before slicing.
Tzatziki
Simply mix together all ingredients until combined and set aside.
To Serve
Simply grab a big board or platter, and place everything on there! It is that simple!
Recipe Note
If you like, you can heat your pita bread in a hot pan or on the barbecue for 30 seconds- 1 minute each side (or until they are golden and soft)!
