Soft, buttery cookies packed with melty milk chocolate and crunchy mini eggs. Golden on the edges, chewy in the centre... the perfect easy Easter bake.
Ingredients

250g softened unsalted butter

200g brown sugar

150g caster sugar

2 large eggs
-
2 teaspoons vanilla

600g plain flour
-
3 teaspoons baking powder
-
1 teaspoon bicarb soda

1 teaspoon salt
-
300g mini eggs chopped
-
250g dairy milk chocolate (finely chopped)- can also use chocolate chips
-
Extra mini eggs for topping
Directions
Preheat your oven to 180 degrees celsius and line your baking trays with baking paper.
Beat your butter and sugars until creamy and add in your eggs and vanilla, beating until well combined.
Mix in your flour, baking powder, bicarb soda and salt, beating until your dough is formed.
Add in your chopped chocolate and chopped mini eggs and stir until well combined.
Roll your dough into balls and top each ball with a mini egg (or 3!). Make sure to spread your cookies out on the tray as they will flatten.
Bake in the oven for 12-16 minutes (depending on size) or until golden brown. Let them cool for around 15 minutes. ENJOY!
