Sweet, juicy peaches are layered with silky prosciutto and creamy burrata, then finished with fragrant basil, pomegranate for extra sweetness and a drizzle of good olive oil.
Ingredients

3 ripe peaches, sliced
- 2 large balls burrata, or 6 small balls
- 100g prosciutto
- 1-2 tablespoons pomegranate seeds
- Handful fresh basil leaves
- 1 tablespoon extra virgin olive oil
- Salt/pepper
Directions
Arrange the peach slices on a large serving platter and tear the prosciutto and ‘drape’ it over the salad.
- Place your burrata on top and scatter over your pomegranate seeds and fresh basil leaves.
Drizzle your olive oil on top and season with salt and pepper.
