Ingredients
Salad
1.5 cups dried orzo
2 cucumbers, diced
2 red capsicums, diced
300g cherry tomatoes, halved
1 cup kalamata olives, halved
1 red onion, diced
Dressing
1 teaspoon Dijon mustard
2 tablespoons extra virgin olive oil
½ lemon, juiced
1 tablespoon red wine vinegar
1 teaspoon dried oregano
1 teaspoon salt
½ teaspoon pepper
⅓ cup chopped parsley
Directions
Cook your orzo according to packet instructions, and set aside.
Add all your dressing ingredients to your salad bowl and mix until combined.
Add in your cooked orzo, and toss evenly in the dressing.
Simply add all your salad ingredients into the bowl, and mix until combined. Enjoy!
