A quick and creamy homemade hummus that is perfect to keep in the fridge for healthy snacking throughout the week. Serve with corn chips, crackers, crunchy vegetables or spread onto wraps and sandwiches.
Ingredients

1 tablespoon extra virgin olive oil

1 teaspoon salt

2 tablespoons tahini

Juice of ½ a lemon

1 garlic clove

1 x 400g tin chickpeas, drained

3 ice cubes
Directions
Place the chickpeas, tahini, lemon juice, garlic, salt and olive oil into a food processor or blender, and blend until smooth.
Add the ice cubes and blend until extra smooth and creamy.
Taste and adjust seasoning if needed. Serve immediately or store in the fridge until ready to use.
