A simple way to celebrate summer stone fruits, this Italian peach cake is light, fluffy and completely fuss-free. Made with ripe peaches and pantry staples, it’s the kind of cake you can throw together and enjoy any time of day. I love to serve this with some vanilla ice cream, double thickened cream or yoghurt!
Ingredients

3 eggs

160g caster sugar

125ml extra virgin olive oil

1 tablespoon orange or lemon juice

1.5 teaspoons vanilla extract

1 teaspoon baking power

1.5 cups plain flour

Pinch salt

1 orange, or lemon zest

4 ripe peaches or nectarines, thinly sliced

2 tablespoons raw sugar
Directions
Preheat oven to 180 degrees Celsius and line a round cake pan with baking paper.
In a large bowl, rub together your sugar and orange/ lemon zest for a minute or so (to help release those yummy flavours).
Whisk in your eggs, then add in your extra virgin olive oil, vanilla and orange (or lemon) juice.
Sift in your flour, baking powder and a pinch of salt.
Place batter into your cake tin, and place your sliced peaches on top. Sprinkle with raw sugar.
Bake for 35-40 minutes, or until a skewer comes out clean. Allow to cool before slicing and serving!
Serve with vanilla ice cream, cream or yoghurt!
