A classic Italian biscuit that works with coffee, dessert, or gifting. One bowl, SUPER easy and quick, no fuss, and just a really good sweet bite.
Ingredients
- 2 egg whites

¼ teaspoon salt

250g caster sugar

250g ground almonds

2 tablespoons lemon zest

1 teaspoon vanilla

2 tablespoons lemon juice
- 30 unpeeled almonds

3 tablespoons icing sugar

3 tablespoons caster sugar

Directions
Preheat oven to 170 degrees Celsius (fan forced) and line 2 large baking trays with baking paper. (
Using an electric mixer, whisk the egg whites and salt until stiff.
Add in your caster sugar, ground almonds, vanilla and lemon zest, and mix until a sticky dough forms.
Add the lemon juice and bring the dough together.
- Place the icing sugar in one bowl and the caster sugar in another.
- Roll the dough into 25–30 small balls.
Coat each ball in caster sugar, then icing sugar, shaking off any excess. Then place on your baking trays (with a little space in between!)
- Press an almond into the top of each ball until the dough begins to crack.
Bake for 12-14 minutes, or until lightly golden and just set on top. Enjoy!
