Ingredients

X4 200g pieces white fish fillet (snapper, barramundi, or cod) *you can also use salmon!

2 cups cherry tomatoes

2 zucchinis, halved

1 red onion, sliced

4 potatoes, thinly sliced

½-¾ cup olives, halved

2 tablespoons olive oil

Juice of 2 lemons

2 teaspoons dried oregano

4 garlic cloves, minced

½ teaspoon salt

¼ teaspoon pepper

1 cup crumbled feta

Fresh parsley

Extra lemon wedges

To serve
Directions
Preheat your oven to 200 degrees Celsius and place your vegetables and fish in a baking tray.
Season with oregano, garlic, salt, pepper and drizzle with olive oil and lemon juice.
Bake for 15-20 minutes, or until your fish is cooked and can easily be ‘flaked’ with a fork.
Top with crumbled feta, fresh parsley and extra lemon.
