A fresh falafel salad bowl loaded with veggies, hummus and a zesty lemon dressing. Light, satisfying and perfect for an easy lunch or dinner.
Ingredients

4 falafel

1 tablespoon hummus

¼ red onion, finely sliced

4 cherry tomatoes, halved

1 cucumber, diced

1 cup cos lettuce, cut

¼ avocado, diced

¼ Capsicum, diced

¼ cup olives, cut

½ Lemon, juiced

½ tablespoon olive oil

½ teaspoon Dijon mustard

½ teaspoon honey

Directions
For your salad, simply place your lettuce, onion, tomatoes, cucumber, capsicum, avocado and olives into a bowl.
For your dressing, place your lemon juice, Dijon mustard, olive oil, honey, salt and pepper into a jar and shake until all ingredients are combined.
Top your salad with falafel and hummus and drizzle over your dressing to serve.
