Soft, moist and full of flavour, this easy banana bread is loaded with chunks of chocolate throughout and is made in one bowl. No electric mixers = less mess. You can swap out the chocolate for some blueberries or raspberries too!

One Bowl Choc-Chip Banana Bread

Ingredients

  • 3 ripe bananas, mashed
  • 2 eggs

  • ½ cup unsalted butter, melted

  • 1 teaspoon vanilla extract

  • ⅓ cup caster sugar

  • ⅓ cup brown sugar

  • 1 ½ cups plain flour

  • ¼ teaspoon salt

  • 1 ½ teaspoons baking soda

  • 170g milk chocolate, roughly chopped

Directions

  1. Preheat the oven to 175 degrees Celsius. Grease and line a loaf tin with baking paper.
  2. Add the mashed bananas, eggs, melted butter and vanilla extract to a large bowl and whisk until well combined.

  3. Add the caster sugar and brown sugar and whisk again until combined.

  4. Add the plain flour, salt and baking soda. Gently fold together until just combined, being careful not to overmix.

  5. Fold through the chopped chocolate, reserving a small handful for the top.

  6. Pour the batter into the prepared loaf tin and smooth the top. Scatter over the remaining chopped chocolate.

  7. Bake for approximately 1 hour and 15 minutes, or until a skewer inserted into the centre comes out clean. If the top is browning too quickly towards the end of cooking, loosely cover with foil.

  8. Allow to cool slightly in the tin before transferring to a wire rack to cool. Slice and enjoy warm or at room temperature.
