A hearty one-pan beef pie with a rich veggie-packed filling and golden puff pastry topping. Comforting, family-friendly and perfect for an easy weeknight dinner.
Ingredients

1kg beef mince

1 teaspoon olive oil

1 brown onion, diced

3 garlic cloves, minced

2 carrots
-
3 celery stalks
-
½ cup chicken or beef stock
-
1 stock cube
-
1 tablespoon plain flour
-
2 tablespoons tomato paste
-
⅓ cup peas
-
1 tablespoon worcestershire sauce

½ tablespoon dried mixed herbs

¼ teaspoon salt
-
¼ teaspoon pepper
-
1 sheet puff pastry
-
1 egg (for ‘washing’)

1 tablespoon sesame seeds (to top)
Directions
Preheat your oven to 180 degrees Celsius.
Either finely chop your celery and carrot, or place in a blender on high speed until well blended. Drain excess liquid and set aside.
Place your oven-safe saucepan over medium-high heat and sauté your onion and garlic in olive oil until fragrant.
Now, add in your celery and carrot, and cook for a few minutes before adding in your beef mince. Break up your mince with your spatula and cook until it begins to caramelise (around 5 minutes), season with salt and pepper.
Add in your flour, tomato paste, stock, stock cube, dried herbs and worcestershire sauce. Mix until well combined and turn the heat down to a simmer for 5 minutes.
Lastly, stir through your peas and then allow your pie mixture to cool down for around 5-10 minutes.
Place 1 sheet of puff pastry on top of your pie mixture (folding the sides) and brush with a little egg wash. Place in the oven and bake for 20 minutes, or until golden brown.
