Creamy, comforting and made all in one pan, this Tuscan Salmon is the ultimate weeknight dinner. With tender salmon, risoni, cherry tomatoes, spinach and cannellini beans all cooked together in a rich creamy sauce. It’s a quick meal that feels hearty and satisfying without taking hours in the kitchen.
Ingredients
- 1 tablespoon olive oil
- 1 brown onion, diced
- 3 garlic cloves, minced
- 1 teaspoon chilli flakes
- 1/2 cup black olives

4 salmon fillets
- 1 teaspoon salt

½ teaspoon black pepper
- 2 cups cherry tomatoes, halved
- 1 cup pouring cream

1/2 cup risoni or orzo pasta

1 400g tin cannellini beans

100g fresh spinach

2 tablespoons lemon juice
Directions
- In a large saucepan/ pot, sauté your onion and garlic in olive oil until fragrant, then add in your chilli flakes and olives. Push that to the side after cooking for a few minutes and add in your salmon.
- Season your salmon with salt and pepper and cook for a few minutes on both sides.
- Add in your cherry tomatoes and place the lid on your pan to allow your tomatoes to soften.
- Next, add in your cream and risoni pasta and let that cook for around 7 minutes.
Finally, add in your cannellini beans, extra pepper and fresh spinach, stir to combine.
Once your spinach has wilted down, add in your lemon juice. Enjoy!
