2 chicken breasts, sliced

2-3 capsicums, sliced

1 red onion, sliced

½ teaspoon paprika

½ teaspoon cumin

¼ teaspoon chilli powder

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon salt

¼ teaspoon pepper

½ tablespoon olive oil

2 corn cobs
-
½ avocado, mashed (with a squeeze of lime and 1 tablespoon chopped coriander)

4 tortillas

Handful fresh coriander leaves

1-2 tablespoons Greek yogurt

1-2 tablespoons Salsa

Preheat your oven to 180 degrees and line a baking tray with baking paper.
Place your chicken, capsicum and red onion on your baking tray and drizzle your olive oil on top. Season with your salt, pepper, paprika, cumin, chilli powder, garlic powder and onion powder- tossing to ensure everything is well coated.
Bake for 15-20 minutes.
Serve your ‘fajita mix’ with your corn, avocado mash, tortillas, coriander, Greek yogurt, salsa & fresh lime wedges.
