Parmesan Roasted Wedges

Crisp roasted wedges finished with parmesan and herbs- simple, filling and the perfect side to grilled meats or a salad bowl.
Ingredients

1.5-2kg potatoes, cut into wedges

3 tablespoons extra virgin olive oil

1 teaspoon salt

¼ teaspoon pepper

¾-1 cup grated Parmesan cheese

⅓ cup freshly chopped parsley (to serve)
Directions
Place your potatoes in a large pot of water and bring to a boil. Reduce to a simmer, and cook until your potatoes are fork tender (around 15 minutes).
Preheat oven to 200 degrees Celsius (fan forced) and toss the potatoes in olive oil, salt and pepper in a large roasting tray, then spread out in a single layer, cut side down.
Roast for 25 minutes, then turn each wedge over and sprinkle with ½ cup grated parmesan. Continue roasting for another 20 minutes, or until the potatoes are golden brown and crispy.
Remove the potatoes from the oven, and top with your remaining Parmesan cheese and fresh parsley.
