This radicchio, orange and fennel salad is everything I love about summer on a plate- crisp, vibrant and full of flavour. The sweetness of the oranges cuts beautifully through the bitter radicchio, while shaved fennel brings that perfect refreshing crunch. Finished with a Dijon lemon vinaigrette, and toasted hazelnuts, it’s the ultimate side for a warm-weather spread and Christmas!
This is one of those salads that looks stunningand takes minutes to pull together. Peppery radicchio, sweet juicy oranges and wafer-thin fennel tossed in a zesty Dijon dressing- fresh, light and so delicious for this Festive season, or with grilled fish, roasted chicken or a summer BBQ. A true crowd-pleaser.
Ingredients
Salad
1 radicchio, leaves (washed and cut if you like)
1 orange, peeled and sliced
1 small fennel bulb, thinly cut (and reserve some fronds!)
½ cup shaved Parmesan
⅓ cup toasted hazelnuts
Lemon Dijon Vinaigrette
2 teaspoons Dijon mustard
1.5 tablespoons extra virgin olive oil
1 lemon, juiced
1 tablespoon honey
½ teaspoon salt
¼ teaspoon pepper
Directions
Place all your dressing ingredients in a jar or in a bowl, and shake (or whisk!) until combined.
Add your radicchio to a salad bowl, and layer on your orange, fennel, Parmesan, fronds and toasted hazelnuts.
When ready to serve, drizzle on your dressing, toss until combined and enjoy!
