Tender, flavour-packed and baked in a rich tomato sugo, these Ricotta Meatballs are the kind of meal everyone comes back for seconds of. The ricotta keeps them soft and juicy, making them perfect served with pasta, bread or a simple salad.
Ingredients

500g beef mince

500g pork mince

4 garlic cloves, minced

250 grams ricotta

2 tablespoons parsley, finely chopped

1 cup breadcrumbs

2 eggs, lightly beaten

⅓ cup grated pecorino cheese

⅓ cup grated parmesan cheese

1 teaspoon salt

¼ teaspoon pepper

500g Sugo
Directions
Preheat the oven to 200 degrees Celsius.
In a large mixing bowl, add your mince, garlic, ricotta, parsley, breadcrumbs, Pecorino, Parmesan, eggs and salt. Gently mix with your hands until just combined. Do not overmix, this keeps the meatballs tender.
In an baking dish, drizzle a little olive oil in the bottom and spoon in half of your sugo.
Using a large spoon or scoop, roll the mixture into large meatballs and place into your baking dish. Spoon over the remaining sauce.
Bake in the oven for 20-25 minutes, or until cooked through. Top with fresh basil to serve!
