One of my most requested recipes, and for good reason. It’s the perfect, flavour-packed side to pair with your favourite protein, and even better served with warm, crusty bread to soak up every last drop. We love to serve this with a lamb or chicken in a Greek inspired marinade.
Ingredients

1 brown onion, diced

4 garlic cloves, minced

2 tablespoons extra virgin olive oil

2 cups cherry tomatoes

1 400g can San Marzano tomatoes

1 teaspoon oregano

1/2 cup fresh basil leaves (plus extra to serve)

1 cup roasted capsicum

1/2 cup black olives
-
Juice of 1 lemon

1 cup feta (to serve)
Directions
Preheat your oven to 180 degrees celsius. Add the onion, garlic and extra virgin olive oil to a large oven dish and roast for 5–10 minutes until softened and fragrant.
Remove from the oven and add in the cherry tomatoes, canned tomatoes, oregano, basil, roasted capsicum, olives and lemon juice. Stir to combine.
Return to the oven and bake for 20–25 minutes until bubbling and slightly reduced.
Finish with crumbled feta and extra basil, and serve warm with crusty bread. Enjoy!
