If salads feel repetitive, this roasted cauliflower one changes everything. Sweet, caramelised cauliflower with fresh greens and a tangy feta dressing, so good you’ll make it on repeat. It is also super festive! Perfect for Christmas!
Ingredients
- 1 cauliflower head, cut into florets

2 tablespoons extra virgin olive oil
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon cumin

½ teaspoon chilli flakes
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 tablespoon white balsamic vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 tablespoon honey
- ½ cup feta

2 cups finely chopped Tuscan Kale
- 1/3 cup currants
- 1/3 cup chopped fresh parsley
- 1/3 cup toasted almonds, chopped
- 1/4 cup pomegranate seeds

Directions
Roasted Cauliflower
Preheat oven to 180 degrees Celsius and toss your cauliflower in extra virgin olive oil, salt, pepper, cumin, chilli flakes, garlic powder and onion powder.
Place on a lined baking tray bake for 25-30 minutes until golden brown.
Dressing
For your dressing, whisk together all ingredients until smooth.
Salad
Whilst your cauliflower is still warm, gently toss it with your kale (to help it wilt down a little). Then, add in your parsley, almonds, currants and pomegranate seeds.
Drizzle on top your dressing, give everything a mix, and enjoy!
