A Japanese-inspired salad with baked salmon, soba noodles, greens and creamy ginger dressing. Perfect for those warmer days when you're craving something fresh yet satisfying.
Ingredients

2 fillets salmon

1 tablespoon ginger (grated)

3 tablespoon soy sauce

1 tablespoon sweet chilli

1 teaspoon garlic (grated)

1 packet soba noodles
- 2 cups lettuce
- 1 broccoli head, steamed
- 1 cucumber, diced
- 1 cup edamame, steamed

1 cup mint leaves

1/2 cup chopped spring onions

1 tablespoon ginger

2 tablespoons lime juice

2 tablespoons kewpie mayo

2 tablespoon soy sauce

1 teaspoon sesame oil

1 avocado, diced

To serve:
Directions
Marinate salmon and place on a roasting tray, and bake at 200 degrees Celsius for 15 min.
Cook soba noodles according with packet instructions. To prevent them from sticking together, drain and ‘rinse’ under cold water, and drizzle with a little sesame oil.
For your dressing, simply whisk all ingredients together until combined and creamy.
Place all salad ingredients into a large bowl, and toss through your dressing.
Top with salmon, avocado, and sesame seeds.
