The salmon cooks beautifully on the barbecue or in a hot pan, which achieves a crisp skin while staying tender inside. The mango salsa brings a burst of sweetness, freshness, and crunch thanks to the avocado, cherry tomatoes, herbs, and lemon. And the sauce… it’s creamy, tangy, a little spicy, and completely irresistible spooned over the top. You'll make this on repeat this summer!
Ingredients
- X6 Salmon fillets
- 1 tablespoon extra virgin olive oil

- 1 mango, diced
- 1 avocado, diced
- 1 red onion, diced
- 300g cherry tomatoes, quartered
- 1 large handful fresh herbs (mint, parsley, basil)
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon extra virgin olive oil
- 1 lemon, juiced
- 3 tablespoons Greek yoghurt
- 1.5 tablespoons mayonnaise
- ½ lime, juiced
- 1 tablespoon honey
- 1 tablespoon sriracha
- 2 teaspoons hot sauce (tabasco or Chilula)
- ½ teaspoon salt
- ¼ teaspoon pepper

Creamy Spicy Lime Sauce
Directions
Season/ marinade your salmon with extra virgin olive oil, salt and pepper.
On a hot barbecue or in a hot pan, cook your salmon, skin side down for 5-6 minutes, or until the skin is crispy. Flip the salmon fillets over and cook for an additional 1-2 minutes, or the flesh is cooked through.
- For your mango salsa, simply mix all ingredients together in a large bowl and set aside.
- For your sauce, whisk together all ingredients until smooth.
Serve your salmon by topping with your salsa and a spoonful of that creamy tangy and spicy sauce. It is THAT simple. Enjoy!
Recipe Note
The salmon also cooks perfectly in the oven!
Oven method: Preheat to 200 degrees Celsius and pop a pan in to heat for 15 minutes.
Lay your salmon skin-side down on the hot pan and bake for 15 minutes. You will get perfectly cooked salmon with crispy skin every time.
