The ultimate weeknight dinner. These smashed cheeseburgers are ready in under 30 minutes, with crispy-edged patties, sweet caramelised onions and a special sauce you’ll want on everything. Pile it all onto a board and let everyone build their own.
Yes, I know I have used double onion for this recipe, but this is to please everyone! Some prefer caramelised onions, others just want simple, fresh red onion! But of course, pick your favourite.
Ingredients

6 burger buns (brioche or potato are best!)

750g beef mince

6 slices American burger cheese

6 large pieces of washed lettuce (baby cos or butter)

2 large tomatoes, sliced

½ red onion, thinly sliced

½ cup pickles
-
2 brown onions, sliced

1 tablespoon extra virgin olive oil

½ tablespoon butter
-
Pinch salt & pepper

3 tablespoons mayonnaise
-
1 tablespoon tomato sauce (ketchup)

½ tablespoon American mustard
-
1.5-2 tablespoons finely chopped pickles

1 tablespoon pickle juice
-
½ tablespoon vinegar

Directions
Caramelised Onions
Add the onions, olive oil and butter to a saucepan over medium heat. Cook for 5 minutes, stirring often, until they begin to soften. Reduce the heat to low, season with a pinch of salt and pepper. Continue to cook for 10–15 minutes, stirring occasionally, until the onions are soft, golden and beautifully jammy.
Special Sauce
Simply mix/ whisk all ingredients together until combined and smooth.
Beef Patties & Buns
Divide the beef mince into 6 equal portions (approximately 125g each) and gently shape into flat patties, being careful not to overwork the meat. *As the patties shrink when cooked, I like to make my patties larger than the buns!
Cook patties in a hot, lightly oiled pan or on the barbecue for 2–3 minutes per side, seasoning generously with salt and pepper. Once cooked, top each patty with a slice of cheese and allow it to melt for approximately 30 seconds, before removing from the heat.
Slice each burger bun in half, and cook on your hot pan/ barbeque for 30 seconds- 1 minute each side.
To serve
Simply arrange the lettuce, tomato, caramelised onion, pickles, red onion and special sauce on a board alongside the buns and patties. Let everyone build their own burger and enjoy!
