Juicy marinated steak, sweet and sour pickled onions, smashed avocado, and feta- these tacos are absolutely loaded with flavour.

Ingredients
- 500–800g steak
- 2 tablespoons extra virgin olive oil
- 1 Juice of 1 lime
- 2 cloves garlic, finely grated
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- ½ teaspoon chilli powder
- Handful fresh coriander or parsley, finely chopped
- Salt and pepper
Pickled Onions
- 1 red onion, thinly sliced
- ½ cup red wine vinegar
- 1 tablespoon caster sugar
- ½ teaspoon salt
- ¼ teaspoon pepper
To serve
- 2 red capsicums
- Avocado, mashed
- 8–10 small tortillas
- Fresh coriander
- Lime wedges
- Crumbled feta
Directions
Combine the steak with the olive oil, lime juice, garlic, smoked paprika, cumin, chilli, herbs, salt and pepper. Leave to marinate for at least 20–30 minutes.
For the pickled onion, combine the red onion, red wine vinegar, caster sugar and salt. Toss well and set aside for at least 20 minutes.
Preheat the oven to 220 degrees Celsius. Place the whole capsicums onto a lined baking tray and roast for 25–30 minutes, or until softened and charred.
Transfer the capsicums to a bowl and cover for 10 minutes. Peel away the skin, remove the seeds and slice into strips.
Mash the avocado with the lime juice and season with salt and pepper.
Cook the steak in a very hot frying pan or on the barbecue to your liking. Rest for 5–10 minutes before slicing thinly against the grain.
Warm the tortillas and layer with smashed avocado, sliced steak, roasted capsicum, pickled onion, coriander and feta.
