This Sticky Date Pudding is soft, rich and exactly the kind of dessert you want on a cold night. Soaked dates create the most beautiful texture, whilst the warm butterscotch sauce melts into every bite. Serve it straight from the oven with vanilla ice cream and cream for an easy dessert that always impresses.
Ingredients
- 250g pitted dates, roughly chopped or cut
- 1 teaspoon bicarb soda
- 1.5 cups boiling water
- 125g softened butter
- 1 cup brown sugar
- 1 teaspoon vanilla extract/ essence
- 2 eggs
- 1 3/4 cups self-raising flour
- 1 cup brown sugar

- Preheat oven to 180 degrees Celsius and line your round baking tin with baking paper.
Place your dates, bicarb and boiling water in a bowl, mixing until combined and let it sit for at least 20-30 mins (the longer the better!)
Using an electric mixer, beat your sugar and butter until light and creamy and then add in your vanilla and eggs.
Fold in your date mixture and flour until just combined. Pour your batter into your pan and bake for 35-45 minutes (or until a skewer comes out clean).
Butterscotch/ Caramel sauce
For your butterscotch/ caramel sauce, place your butter, cream, sugar and vanilla in a pot over medium heat, mixing until it comes to a boil. Then, simmer for 3 minutes.
Using a skewer, poke holes into your warm pudding and then pour over 1/2 of your sauce letting it absorb into the pudding.
When ready to serve, cut into big wedges with a scoop of vanilla ice cream, dollop cream and that delicious sauce. Enjoy!
