These muffin tops are everything you love about a muffin, just the best part. Perfectly sweet, lightly crisp on the edges and a moist crumb.
Ingredients

1.5 cups strawberries, diced

3/4 cup white choc chips

1.5 cups plain flour

1/3 cup caster sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1 tablespoon lemon zest

Pinch salt

2 tablespoons raw sugar (for the top of the muffin tops)
- 1/2 cup butter, melted

3 tablespoons Greek yoghurt

1-2 tablespoons lemon juice
-
1 egg
-
1.5 teaspoons vanilla

Directions
Preheat oven to 200 degrees Celsius and line a baking sheet with baking paper.
Melt butter and allow to cool.
Dice strawberries and pat dry on paper towels.
Whisk dry ingredients together in a large bowl and mix in 1 tablespoon through your strawberries (to prevent them from sinking).
In a small bowl or jug, whisk together your wet ingredients.
Gently mix your wet and dry ingredients and then fold in your strawberries and white chocolate chips.
Scoop mixture onto your baking tray (leaving approximately 5cm in between to allow them to spread) and sprinkle each one with raw sugar.
Bake for 16-20 minutes or until golden.
Allow to cool before dusting with icing sugar.
