A simple, nourishing green bowl packed with quinoa, eggs, leafy greens and crunchy seeds. Fresh, satisfying and perfect for either breakfast or a light lunch when you want something wholesome and easy.
Ingredients

2 eggs

1.5 cups kale, chopped

⅓ cup quinoa
-
1 tablespoon lemon juice
-
½ tablespoon olive oil
-
¼ avocado
-
1 tablespoon toasted almonds
-
1 tablespoon pumpkin seeds
-
¼ broccoli head, thinly sliced

1 tablespoon pesto
Directions
Place your quinoa in a saucepan and add 1.5 cups of water with a pinch of salt. Bring water to the boil and then cover with a lid, turning the heat down and allow to cook for 15 minutes.
For your soft boiled eggs, bring a small pot of water to the boil, and place your 2 eggs in the water. Set your timer to 6 minutes. Once cooked, place in a bowl of ice water to stop the cooking process and peel your eggs.
Place your kale in a large bowl, along with lemon juice, olive oil, salt and pepper. Massage your kale for a couple of minutes until it begins to soften. Then, add in your broccoli, cooked quinoa, pumpkin seeds and almonds.
To serve, place your salad into a bowl and top with your 2 eggs, avocado and a tablespoon of pesto.
