Ingredients
- X1 425g tin tuna
- 1/2 red onion, finely diced
- 75g feta
- 3 tablespoons mayonnaise
- 500-600g frozen spinach
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 6-8 sheets puff pastry
- 1 egg, beaten (for ‘wash’)
Directions
Preheat your oven to 200 degrees Celsius fan forced and line 2 trays with baking paper.
- Place the spinach into a microwave-safe bowl and cook for 5–7 minutes, or until heated through. Once cooked, allow it to cool slightly, then squeeze out as much excess liquid as possible. This step is key so your rolls aren’t soggy.
In a large bowl, combine the tuna, red onion, feta, mayonnaise and spinach. Season with salt and pepper and mix until well combined.
- Lay a sheet of puff pastry on a clean surface and cut in half. Spoon the mixture along the long edge of each piece, shaping into a log.
- Roll the pastry over the filling to enclose, then seal the edge. Place seam-side down.
- Cut each roll into your desired size and place onto the prepared trays.
- Brush with egg wash andbake for 25–30 minutes, or until golden, puffed and cooked through.
