When you need a no fuss side dish (or main meal) this is it. It is ready in 15 minutes, takes 0 effort and only has a handful of ingredients.
Ingredients

1 tablespoon extra virgin olive oil

1 tablespoon butter
- 2 shallots, finely diced
- 4 garlic cloves, minced
- 1 teaspoon chilli flakes
- ½ teaspoon oregano
- 2-3 tablespoons tomato paste

1.5 cups orzo
- ¼ cup vodka
- 2.5 cups chicken stock

½-¾ cup cream
- ½ cup parmesan cheese

Fresh basil leaves (to serve)

125g buffalo mozzarella (to serve)
Directions
- In a pan over medium heat, heat your olive oil and 1 tablespoon butter together, then sauté your shallots and garlic for 2-3 minutes until soft and fragrant. Add in your chilli flakes and oregano.
- Next, add in your tomato paste, and after 3 minutes (it should be nice and caramelised), deglaze the pan with vodka.
Add in your orzo, and mix for 30 seconds- 1 minute, then pour in your chicken stock. Allow to cook for 6 minutes, stirring often to limit it sticking to the bottom of the pan!
To finish, mix in your cream and parmesan cheese.
Top with fresh basil and torn buffalo mozzarella. ENJOY!
